Shane built his foundational knowledge of flavour by meticulously studying and perfecting the balance of classic cocktails. This process was key to honing his blending skills and understanding how to layer and balance flavours, leading him to curate numerous acclaimed cocktail menus.

His transition to distilling was a natural evolution of this expertise. Shane’s commitment to the artisan process is evident in his journey: he learned the craft organically, progressing from a 4L air still to a 20L copper pot still before acquiring his current 100L copper pot still.

This hands-on approach was immediately validated when his very first gin in 2018 became award-winning.

Beyond the still, Shane’s expertise lies in experimentation - constantly exploring new ingredients, methods, and thinking outside the box to push the boundaries of flavour.

Crucially, the entire process is hand-crafted from A-Z, with minimal machinery, ensuring every drop meets the highest standard of artisan quality.
